Damo's Cheesy Chilli Chips

These cheesy treats come with an easy to make guacamole on the side! Why not make some up for movie night, or a garden party?

Ingredients:

Tortillas
1 large packet salted tortilla chips
1 large green chilli pepper cut into thin slices
Handful of black or green olives, sliced
Vegan cheese (eg Block), grated

Easy guacamole
1 large avacado, mashed (fork or blender is fine)
½ lemon, juiced
¼ teaspoon black pepper
¼ teaspoon Salt

Preparation:

Another super simple one for you all!

Pour the tortillas onto a baking tray, ensuring they’re on a single layer. Sprinkle the grated cheese over the top, then cover with the sliced chilli and olives.

Whack it under the grill until the cheese melts. Keep a close eye on it, though! Tortillas burn fast if you’re not on your toes!

For the easy guacamole, mash the lemon juice, salt, pepper and avocado together in a small bowl and use two spoons to round the mixture and turn out onto a side plate or ramekin.
