INGREDIENTS
- ½ Cup Broccoli
- 3 tbsp Hummus
- ½ Cup Kale
- 3 Chestnut Mushrooms
- 1 tbsp Seeds (Sunflower, Chia, or Pumpkin)
- 1 tbsp Soy Sauce
- ½ Cup Edamame Beans
- ½ Cup Quinoa (cooked as per packet instructions)
METHOD
- Lightly fry the kale and throw over the soy sauce.
- Lightly fry the mushrooms whole.
- Blanch the broccoli and edamame beans in salted boiling water.
- Place all ingredients into a bowl, and arrange as handsomely as you desire. Sprinkle over the seeds for an extra nutrient kick!
